Single Origin Release: Costa Rica Las Lajas Honey
One of the only certified organic farms in Costa Rica, Las Lajas is located outside the town of Sabanilla in central Costa Rica. The owners, Francisca and Oscar Chacón, are third generation coffee producers known for their attention to detail in every step of production, most notably, their processing procedures. The 38 hectares of land are split into several sections that have unique microclimates and the coffees from each section are processed differently. This variance in processing creates noticeably different flavor profiles in the end product. In this case, the honey process produces a sweeter profile with a crisp finish as the pulpy, sweet mucilage from the coffee fruit is left surrounding the bean during the drying process and meticulously turned to ensure drying is consistent and thorough. The coffees from Las Lajas have been a staple of our annual single-origin lineup for the last 6 years and we’re happy to bring this back for another year.
