Eleazar Delgado opened Cafe Jumping Bean Coffeehouse and Gallery in 1994, and it’s become a staple of Chicago's Pilsen community ever since. To create this blend, Eleazar worked with the artisan roasters at Metropolis to stitch together Latin coffees, roasted at multiple roast levels. The result is wildly complex, vibrant and absolutely lovable, just like Cafe Jumping Bean itself. We recommend you make a day of it in Pilsen to try a cup in person at one of their Pilsen cafes. But, if you can’t make it, you can always order a bag (or three) right here.

Something about this blend works amazingly well for me at home. I would hesitate to describe the taste as "dark roast," even if that's what it is. It tastes extremely balanced without being boring. It's rich and full bodied, but not overly chocolaty. Works really well as a pour over or Aeropress. Just wish they sold bigger bags!

I don't usually reach for dark roasts. They can be bitter and thin. Not this one. It's rich and chocolatey and not overwhelming at all. It has a great balance.
