Finca España is grown by Nora Lemus De Diaz Nuila and anaerobically processed at the El Carmen mill by our good buddy Fernando Alfaro (the guy who grows the beans used in La Cordillera and Spice Island!). A little more about the fermentation. This anaerobically processed coffee is fermented in an airtight tank over 168 hours, then air-dried on raised beds. Flavor-wise it will present like a magnified natural - that is to say, very fruit-forward. We’re thrilled to work with our longtime partner on this offering, our first ever anaerobic natural brew. The aroma when it brews reminds me of baking rich fudge brownies.
I'd like to note that I usually get light roast, so getting a medium is always a risk but this one was thoughtfully roasted -- no sense of char.

Everything from the aroma to the flavor to the body was immaculate.
Nice stewed strawberries and blackberries with a slightly floral element like violets.

This coffee demonstrates how anaerobic processing can enhance flavors without allowing the funkier notes to dominate. It strikes a nice balance between the fermented characteristics and the strawberry and chocolate notes. I'm looking forward to trying more of Metropolis' anaerobic offerings in the future!
